SUS420J2 is a specific stainless-steel designation, which makes it more informative than a listing that says only “420” or “420J.” For a knife, it is still the starting point: the maker’s heat treatment, edge geometry and intended use determine what you can reasonably expect from the finished blade.
What Is SUS420J2?
The Japan Stainless Steel Association lists SUS420J2 among martensitic stainless steels. Its reference gives a carbon range of 0.26–0.40%, along with chromium and limits for other elements. We use that coherent specification here rather than mixing it with a supplier’s nominal recipe or a chart using different figures.
Understanding the Specification
A specification range is not the measured composition of every knife. The selected reference also permits nickel up to 0.60%; this is an optional allowance, not a required addition. A product marked only 420 or 420J does not establish that it is SUS420J2, and the 420HC name should not be treated as interchangeable either.
Sharpening and Stainless Care
Inspect the edge before sharpening and choose a grit suited to the work. Maintaining an existing bevel takes less reshaping than repairing damage. Clean and dry the blade after use, especially after salt or acidic food; the stainless designation does not make corrosion impossible.
When Comparing SUS420J2 Knives
Check whether the steel is used for the cutting edge or another part of the blade construction, and ask for the exact model’s specification. A grade used in one role should not be judged by assumptions about another. Without numerical ratings in this collection, consider the maker’s evidence and the knife’s design rather than inventing a rank from the alloy name.
