80CrV2 is a non-stainless knife steel that emphasizes toughness and a maintainable cutting edge. It is a practical option for readers who are comfortable cleaning and drying a blade and keeping up with touch-ups. The small chromium and vanadium additions do not make it a stainless or high-wear powder steel.
What Is 80CrV2?
80CrV2 is a conventional low-alloy steel containing chromium and vanadium. The chemistry below follows SIJ's SIHARD 2235 specification for the grade, so it should not be read as a certificate for every supplier's stock. The full designation matters when comparing specifications.

Edge Retention in Use
80CrV2 scores 1.5 for abrasive edge retention. It is not intended to compete with high-carbide steels mainly on wear life, so regular edge maintenance is a sensible expectation. Its usefulness is better understood alongside the toughness rating and the geometry of the finished knife.
Toughness and Heat Treatment
Its toughness rating is 8. That supports a toughness-focused role, while leaving heat treatment and edge design central to the outcome. A well-suited edge can take advantage of the steel's properties; the grade name alone does not specify how thin the edge should be or guarantee resistance to every kind of damage.
Sharpening and Non-Stainless Care
Suitable conventional stones can work with 80CrV2. Follow the existing bevel for maintenance, use a coarser abrasive for repair and check burr removal before moving on to finer finishing. There is no need to treat a small vanadium addition as if it were the carbide content of a high-vanadium powder steel.
Its corrosion-resistance rating is 0. That is a relative rating for very limited corrosion resistance, not a prediction that the blade rusts immediately. Dry it after use and protect it for storage. A coating does not cover the sharpened edge.
Who Should Consider 80CrV2?
Consider it when toughness, blade design and straightforward edge maintenance matter more than long abrasive cutting life. Choose a maker with clear information about the knife's intended use and treatment. If the blade will regularly stay wet or receive little maintenance, a corrosion-resistant alternative may suit your habits better. Our knife steel guide helps compare those priorities.
