ZDP-189 is a powder steel that puts substantial emphasis on abrasive wear resistance, with low toughness and more corrosion care than its stainless marketing might suggest. It can suit controlled slicing, but it is not a simple upgrade for every knife. The high chromium figure in its composition is only part of the corrosion story.
What Is ZDP-189 Steel?
ZDP-189 is a powder metallurgy grade historically associated with Hitachi and now listed by Proterial. The producer discloses carbon and chromium values while keeping other listed alloy details closed. The short composition table should not be read as proof that no other elements are present.

Edge Retention and Toughness
ZDP-189 scores 8 for abrasive edge retention and 2 for toughness. That is a strongly wear-focused balance: useful for keeping a working edge through abrasive slicing, but less forgiving of loads that cause chipping. A suitable edge angle and controlled cutting matter more here than assuming high wear resistance means a more durable edge in every sense.
Is ZDP-189 Stainless?
The producer positions ZDP-189 as stainless, but Thomas's testing found limited corrosion resistance, reflected in its rating of 5. Much of the chromium can be tied up in carbides rather than remaining available in the steel matrix to resist corrosion. Total chromium content alone therefore gives an incomplete picture.
In practice, clean and dry the blade promptly after wet use or contact with acidic food, and consider appropriate storage protection. For frequent wet or saltwater use, choose for stronger corrosion resistance rather than relying on the category name.
See our LC200N profile for a different balance that puts corrosion resistance ahead of abrasive edge life.
Sharpening ZDP-189
Aluminum-oxide sharpening stones can abrade ZDP-189's chromium carbides; high hardness alone does not make diamond mandatory. Diamond abrasives are another option. Use a suitable grit for the work and pay attention to burr removal as you finish.
If there is edge damage, repair it with an appropriate coarser abrasive before moving to a finer finish. For ordinary maintenance, following the existing bevel avoids unnecessary metal removal. The particular knife's hardness and edge geometry also affect how much work the edge needs.
When Is ZDP-189 a Sensible Choice?
Consider it when abrasive edge life matters, your use is controlled slicing and you are comfortable with the care requirements. If you frequently chip edges or need low-maintenance wet use, a tougher or more corrosion-resistant grade may serve you better. Check the maker's actual heat-treatment information rather than assuming one hardness applies to every ZDP-189 knife. Our knife steel guide helps compare the alternatives.
